Ingredients
  

Brownie Base
  • 1 cup pumpkin puree canned or homemade
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
Mix the Ingredients
  1. In a mixing bowl, whisk together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  2. In a separate bowl, combine the cocoa powder, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Bake the Brownies
  1. Pour the brownie batter into the prepared baking pan and spread evenly.
  2. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the brownies to cool in the pan for 10 minutes before lifting them out using the parchment paper. Cut into squares and serve.
