Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 1 cup pumpkin puree canned or homemade
  • 1 large egg
  • 1 teaspoon vanilla extract
Cinnamon Sugar Coating
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt. Set aside.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the pumpkin puree, egg, and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. In a small bowl, mix together the granulated sugar and cinnamon for the coating.
  2. Using a cookie scoop, portion out the dough and roll each ball in the cinnamon sugar mixture.
  3. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
  5. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
