Ingredients
  

Crispy Sweet Potato Hash Base
  • 3 large sweet potatoes peeled and diced into ½-inch cubes (about 4 cups)
  • 6 strips halal beef bacon or turkey bacon chopped into ½-inch pieces
  • 1 ½ tablespoon extra virgin olive oil or avocado oil divided
  • 1 medium yellow onion finely diced
  • 1 large red bell pepper seeded and diced
  • 3 cloves fresh garlic minced
  • 2 cups fresh baby spinach leaves loosely packed
Seasoning & Fresh Eggs
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon fine sea salt to taste
  • ¼ teaspoon freshly cracked black pepper
  • 4 large pasture-raised eggs
Garnish & Serving
  • 2 stalks scallions (green onions) thinly sliced
  • 1 medium avocado sliced for serving
  • 1 dash hot sauce optional, for drizzling

Method
 

Crisp Bacon & Sear Sweet Potatoes
  1. Crisp the Bacon: Heat a 12-inch seasoned cast-iron skillet over medium heat. Add chopped halal beef bacon or turkey bacon and cook for 5 to 6 minutes until deeply browned and crisp. Transfer with a slotted spoon to a paper towel-lined plate, reserving 1 tablespoon drippings in the skillet.
  2. Caramelize Sweet Potatoes: Add olive oil to the hot skillet. Add diced sweet potatoes in an even layer. Let cook undisturbed for 4 minutes to develop a rich golden crust. Stir and continue cooking for 8 to 10 minutes until fork-tender with crispy browned edges.
Sauté Veggies & Season
  1. Sauté Aromatics: Push sweet potatoes slightly to the side. Add diced onion, red bell pepper, and garlic. Sauté for 3 to 4 minutes until tender and fragrant.
  2. Season & Wilt Spinach: Sprinkle smoked paprika, cumin, sea salt, and black pepper over the skillet. Toss everything together to coat evenly. Add baby spinach and cook for 1 to 2 minutes until just wilted.
Cook Eggs & Serve
  1. Nestle Eggs: Return crisp bacon to the skillet. Use the back of a spoon to create 4 shallow wells in the sweet potato hash. Gently crack one egg into each well.
  2. Cover & Set Whites: Reduce heat to medium-low, cover skillet tightly with a lid or foil, and cook for 3 to 5 minutes until egg whites are set and yolks remain velvety and runny. Garnish with sliced scallions and avocado, and serve warm immediately straight from the skillet!
