Ingredients
  

Rice and Vegetables
  • 2 cups long-grain white rice
  • 1 cup chicken broth or vegetable broth for vegetarian option
  • 1 cup diced tomatoes canned or fresh
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas optional

Method
 

Cooking Spanish Rice
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In the rice cooker, combine the rinsed rice, chicken broth, diced tomatoes, onion, bell pepper, garlic, cumin, paprika, salt, and black pepper.
  3. Stir the mixture to combine all ingredients evenly.
  4. Close the rice cooker lid and set it to the 'white rice' setting or equivalent.
  5. Once the rice cooker indicates that cooking is complete, let it sit for an additional 5-10 minutes before opening the lid.
  6. Fluff the rice with a fork and stir in the frozen peas if using. Serve warm.
