Ingredients
  

Filling
  • 4 Banana Peppers halved and seeded
  • 1 cup Cooked Rice white or brown
  • 1 cup Shredded Cheese cheddar or mozzarella
  • 1 cup Black Beans cooked and drained
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 clove Garlic minced
  • 1 tablespoon Olive Oil for drizzling
  • 1 pinch Salt
  • 1 pinch Black Pepper

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the banana peppers in half lengthwise and remove the seeds.
Make the Filling
  1. In a mixing bowl, combine cooked rice, shredded cheese, black beans, cumin, chili powder, and minced garlic. Mix well.
Stuff the Peppers
  1. Stuff each banana pepper half with the filling mixture. Place them in a baking dish.
Bake
  1. Drizzle olive oil over the stuffed peppers and season with salt and black pepper. Bake in the preheated oven for 25-30 minutes until the peppers are tender.
Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy your stuffed banana peppers!
