Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the banana peppers in half lengthwise and remove the seeds.

- In a mixing bowl, combine cooked rice, shredded cheese, black beans, cumin, chili powder, and minced garlic. Mix well.
Stuff the Peppers
- Stuff each banana pepper half with the filling mixture. Place them in a baking dish.
Bake
- Drizzle olive oil over the stuffed peppers and season with salt and black pepper. Bake in the preheated oven for 25-30 minutes until the peppers are tender.
