Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup bell peppers, diced mix of colors
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 1 cup rice, uncooked white or brown
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is translucent.
  2. Add ground beef to the pot, cooking until browned. Drain excess fat if necessary.
  3. Stir in diced bell peppers, diced tomatoes, beef broth, uncooked rice, Italian seasoning, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat to low and simmer for about 30 minutes, or until rice is cooked through.
