  • 2 medium sweet potatoes about 2 cups, diced
  • 6 large eggs
  • 1 cup whole milk or dairy alternative
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh spinach
  • 1 medium onion diced
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Peel and dice sweet potatoes into bite-sized pieces; season with salt and pepper and spread in the baking dish.
  3. Sauté the diced onion in a skillet over medium heat until translucent (about 5 minutes). Add spinach until wilted, then combine with sweet potatoes.
  4. In a bowl, whisk together eggs and milk; season with salt and pepper.
  5. Pour the egg mixture over the sweet potato and veggie layer; stir gently to combine.
  6. Top with shredded cheddar cheese and bake for 30-35 minutes or until set and golden brown.
