Scones
- Preheat the oven to 400°F (200°C). In a mixing bowl, combine flour, baking powder, and sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the heavy cream and dried fruit until just combined.
- Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds.
- Place on a baking sheet and bake for 15-20 minutes until golden. Cool on a wire rack.
Mini Pastries
- Roll out the puff pastry and cut into small squares. Place on a baking sheet.
- In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Spoon onto the center of each pastry square.
- Top with fresh berries and fold the corners of the pastry over the filling. Bake at 375°F (190°C) for 15-20 minutes until golden.
Cookies
- Preheat the oven to 350°F (175°C). In a bowl, cream together butter, sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in vanilla. Combine flour and baking soda; gradually add to the creamed mixture.
- Fold in chocolate chips. Drop by spoonfuls onto ungreased baking sheets.
- Bake for 10-12 minutes or until edges are golden. Cool on wire racks.
