Ingredients
  

Cucumber Sandwiches
  • 1 large cucumber thinly sliced
  • 4 slices white bread crusts removed
  • 2 tablespoons cream cheese softened
  • 1 tablespoon fresh dill chopped
  • to taste salt
Egg Salad Sandwiches
  • 4 large eggs hard-boiled and chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard Dijon preferred
  • 2 slices whole grain bread crusts removed
  • to taste pepper
Smoked Salmon Sandwiches
  • 4 slices rye bread crusts removed
  • 4 ounces smoked salmon thinly sliced
  • 2 tablespoons cream cheese softened
  • 1 tablespoon capers drained
  • to taste lemon juice
Chicken Salad Sandwiches
  • 2 cups cooked chicken shredded
  • ¼ cup mayonnaise
  • 1 stalk celery finely chopped
  • 2 slices white bread crusts removed
  • to taste salt and pepper

Method
 

Prepare Cucumber Sandwiches
  1. Mix cream cheese, dill, and salt in a bowl. Spread on one side of each bread slice. Layer cucumber slices on top and close the sandwich. Cut into quarters.
Prepare Egg Salad Sandwiches
  1. Combine chopped eggs, mayonnaise, mustard, and pepper in a bowl. Mix well. Spread on bread and cut into triangles.
Prepare Smoked Salmon Sandwiches
  1. Spread cream cheese on rye bread. Layer smoked salmon and capers, drizzle with lemon juice, and top with another slice of bread. Cut into small squares.
Prepare Chicken Salad Sandwiches
  1. Mix shredded chicken, mayonnaise, celery, salt, and pepper in a bowl. Spread on bread and cut into desired shapes.
