Ingredients
  

Salad Ingredients
  • 8 oz rice noodles cooked according to package instructions
  • 1 cup red bell pepper thinly sliced
  • 1 cup carrot julienned
  • 1 cup cucumber thinly sliced
  • 1 cup green onions chopped
  • ½ cup fresh cilantro chopped
  • ¼ cup peanuts chopped, for garnish
Dressing
  • 3 tablespoon lime juice
  • 2 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon fish sauce optional
  • 1 tablespoon sugar or honey
  • 1 clove garlic minced
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes adjust to taste

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.
Make the Dressing
  1. In a small bowl, whisk together lime juice, soy sauce, fish sauce, sugar, garlic, sesame oil, and red pepper flakes until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooked noodles, red bell pepper, carrot, cucumber, green onions, and cilantro.
  2. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Garnish with chopped peanuts and serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes
