Ingredients
  

Beans
  • 1 cup canned kidney beans rinsed and drained
  • 1 cup canned chickpeas rinsed and drained
  • 1 cup canned green beans rinsed and drained
Vegetables
  • 1 cup chopped bell pepper any color
  • ½ cup chopped red onion
  • ½ cup chopped celery
Dressing
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Method
 

Prepare the Beans
  1. In a large mixing bowl, combine the kidney beans, chickpeas, and green beans.
Add Vegetables
  1. Add the chopped bell pepper, red onion, and celery to the bowl with the beans.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the bean and vegetable mixture and toss to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
