Ingredients
  

Beans
  • 1 can kidney beans rinsed and drained
  • 1 can chickpeas rinsed and drained
  • 1 can green beans cut into 1-inch pieces
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper diced
  • ½ cup red onion finely chopped
Dressing
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Prepare the Beans
  1. In a large mixing bowl, combine the kidney beans, chickpeas, and green beans.
Add Vegetables
  1. Add the cherry tomatoes, bell pepper, and red onion to the bowl with the beans.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Combine
  1. Pour the dressing over the bean and vegetable mixture and toss to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
