  • 1 cup granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups fresh blueberries

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, vegetable oil, and eggs until smooth.
  4. Gently pour the wet mixture into the dry ingredients; stir until just combined. Fold in the blueberries carefully.
  5. Spoon the batter into the prepared muffin tin until each cup is about two-thirds full.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean. Let cool slightly before serving.
