Ingredients
  

Vegetables
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups fresh tomatoes chopped
  • 2 cups vegetable broth or chicken broth
  • 1 cup fresh basil leaves packed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Method
 

Cooking the Soup
  1. Heat olive oil in a saucepan over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add fresh basil leaves, salt, and pepper. Remove from heat.
  5. Using a blender, puree the soup until smooth. Return to the saucepan and heat through if necessary.
