Ingredients
  

Base Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped or canned tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon dried basil or fresh basil
  • 1 teaspoon dried oregano
Garnish
  • ¼ cup fresh basil, chopped for garnish
  • ¼ cup heavy cream optional, for serving

Method
 

Prepare the Soup
  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chopped tomatoes, vegetable broth, sugar, salt, black pepper, basil, and oregano. Bring to a boil.
  4. Reduce heat and let it simmer for about 20 minutes, allowing the flavors to meld.
  5. Using a blender, puree the soup until smooth. If desired, return to the saucepan and heat through.
Serve
  1. Ladle the soup into bowls and garnish with fresh basil and a drizzle of heavy cream if using.

Notes
