Ingredients
  

Chicken and Orzo
  • 1 pound chicken breast diced
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup spinach fresh
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic minced
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste
  • ¼ cup Parmesan cheese grated

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 6-8 minutes.
  2. Add minced garlic and sun-dried tomatoes to the skillet, cooking for an additional 1-2 minutes until fragrant.
Cooking the Orzo
  1. In a pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente, about 8-10 minutes.
Combining Ingredients
  1. Once the orzo is cooked, drain any excess broth and add it to the skillet with the chicken. Stir in the heavy cream and fresh spinach, cooking until the spinach wilts.
  2. Sprinkle grated Parmesan cheese over the top and mix well until combined and creamy.
Serving
  1. Serve warm, garnished with additional Parmesan cheese if desired.
