Ingredients
  

  • 1 cup Arborio rice
  • 2 cups mixed fresh mushrooms (cremini and shiitake), chopped
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth, warmed
  • ½ cup dry white wine
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoon unsalted butter
  • Fresh parsley or thyme, for garnish

Method
 

  1. Prepare all ingredients by chopping the mushrooms, onion, and garlic.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add onions and sauté until translucent (about 3 minutes). Stir in garlic and mushrooms; cook for an additional 5 minutes until softened.
  3. Add Arborio rice to the skillet and toast for about 2 minutes until edges are translucent.
  4. Pour in white wine; stir continuously until absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring gently until mostly absorbed before adding more (about 20 minutes total).
  6. Once cooked, remove from heat; stir in remaining butter and Parmesan cheese. Season with salt and pepper to taste. Garnish with herbs before serving.
