  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • 0.5 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (full-fat)
  • 0.5 cups unsalted butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, sift together flour, cocoa powder, baking powder, and a pinch of salt.
  3. In another bowl, whisk together vegetable oil, sugar, eggs, buttermilk, red food coloring, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into prepared liners, filling each about two-thirds full.
  6. Bake for 20-22 minutes or until a toothpick comes out clean.
  7. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until desired consistency is reached.
  8. Once cupcakes are cool, frost generously and enjoy!
