Ingredients
  

Casserole Ingredients
  • 4 cups yellow squash, sliced about 2 medium squashes
  • 1 cup onion, chopped yellow or white onion
  • 1 cup cheddar cheese, shredded for topping
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 large egg beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup bread crumbs for topping

Method
 

Prepare the Squash
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced yellow squash and chopped onion.
  3. Add salt and pepper to the mixture and stir well.
Mix the Casserole
  1. In another bowl, mix together the sour cream, beaten egg, and half of the shredded cheddar cheese.
  2. Combine the squash mixture with the sour cream mixture and stir until well combined.
Bake the Casserole
  1. Transfer the mixture to a greased baking dish.
  2. Top with remaining cheddar cheese and bread crumbs.
  3. Bake in the preheated oven for 30 minutes, or until golden brown and bubbly.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
