Ingredients
  

Vegetables
  • 4 medium Zucchini sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
Dairy
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella Cheese
  • ½ cup Parmesan Cheese grated
Seasonings
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
Others
  • 2 tablespoons Olive Oil for sautéing
  • 1 cup Bread Crumbs for topping

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, half of the mozzarella, oregano, salt, and pepper.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  4. Add sliced zucchini to the skillet and cook for about 5 minutes until slightly softened.
Assembly and Baking
  1. In a baking dish, layer half of the zucchini mixture, then spread the ricotta mixture on top.
  2. Add the remaining zucchini mixture and top with bread crumbs and the rest of the mozzarella and Parmesan cheese.
  3. Bake in the preheated oven for 25-30 minutes until golden and bubbly.
