Ingredients
  

Zucchini
  • 2 medium zucchini sliced into fries
Breading
  • 1 cup panko breadcrumbs for extra crunch
  • ½ cup grated Parmesan cheese optional for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt to taste
  • ½ teaspoon black pepper to taste
Coating
  • 1 large egg beaten
  • 1 tablespoon olive oil for coating

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchini into fry shapes and place them in a mixing bowl.
  3. In a separate bowl, mix together panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the egg and add olive oil.
Coating and Cooking
  1. Dip each zucchini fry into the egg mixture, then coat with the breadcrumb mixture.
  2. Place the coated zucchini fries in a single layer in the air fryer basket.
  3. Cook for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.
  4. Remove from the air fryer and serve immediately with your favorite dipping sauce.
